HARVEST: Hand and machine harvested, during the
end of March/beginning of April.
WINEMAKING: Short maceration period of 10-12
days with pump over or cap punching.
Fermented between 26-28°C.
AGING: Wine is stored along with light lees in
stainless steel tanks until bottled.

The organic and biodynamic grapes are handpicked early in April and hand-destemmed, berry by berry, before fermenting both in new French oak barrels and stainless-steel tanks with their wild yeast. Ages for 24 months in new French oak barrels and rests for 12 months in bottle. Age for 8+ years.
